Ingredients

  • 1½ lb ground turkey
  • 1 (1-oz) envelope fajita seasoning mix (or taco seasoning mix)
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • ⅓ cup water
  • 1 (10-oz) pkg zucchini noodles
  • 1½ cups shredded mild Cheddar cheese

Instructions

  1. Cook turkey in a large nonstick skillet over medium-high heat until crumbly and done. Season with salt and pepper, if desired. Add seasoning, tomatoes, beans, corn, and water. Simmer 5 minutes.
  2. Add zucchini. Cover and cook just until zucchini is tender. Sprinkle with cheese; let stand until cheese melts.

Side Dish Ingredients

  • 1 (10-oz) pkg multigrain tortilla chips
  • 1 (16-oz) pkg strawberries

Side Dish Instructions

  1. Serve chips and fruit on each plate.
