No-Crust Sausage Quiche with Olives and Tomatoes

Ingredients

  • 1 lb Italian ground pork sausage, casings removed
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup grape tomatoes, halved
  • ½ cup pitted kalamata olives, halved
  • 8 large eggs
  • ¼ tsp pepper
  • ¼ cup small fresh basil leaves

Instructions

  1. Preheat oven to 375°F. Cook sausage in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly.
  2. Add garlic, tomatoes, and olives; cook 2 to 3 minutes. Remove from heat. Spread sausage mixture in a greased 9-inch pie plate.
  3. Whisk together eggs and pepper. Pour over sausage mixture.
  4. Bake 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges; sprinkle with basil.
