Ingredients

  • 2 lb peeled and deveined, large raw shrimp
  • ½ tsp kosher salt
  • ¼ tsp crushed red pepper
  • ¼ cup olive oil, divided
  • 1 cup chopped fresh parsley
  • 3 Tbsp minced garlic
  • 2 Tbsp white wine vinegar

Instructions

  1. Sprinkle shrimp with salt and red pepper. Cook shrimp in 2 Tbsp hot oil in a large skillet over medium-high heat 3 to 4 minutes or until shrimp turn pink.
  2. Add parsley, 2 Tbsp oil, garlic, and vinegar, tossing to coat shrimp. Cook 2 minutes or until thoroughly heated.

  • 2 (8-oz) pkg thin green beans
  • ¼ cup olive oil, divided
  • ½ tsp kosher salt, divided
  • 2 lb red potatoes, cubed
  • ¾ cup freshly grated Parmesan cheese
  • ¾ tsp Italian seasoning

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together green beans, 1 Tbsp oil, and ¼ tsp salt on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 to 20 minutes or until browned and tender, stirring halfway through baking.
  3. Meanwhile, bring potatoes and water to cover to a boil in a Dutch oven or large saucepan. Cook 5 to 10 minutes or until tender when pierced with a fork; drain.
  4. Return potatoes to pot; add cheese, 3 Tbsp oil, Italian seasoning, and ¼ tsp salt; cook until thoroughly heated, mashing potatoes with a potato masher to desired consistency.
