Cheesy Meatball Bake

Ingredients

  • 1 Tbsp olive oil
  • ¾ lb ground beef
  • 1 cup shredded mozzarella cheese, divided
  • 2 Tbsp freshly grated Parmesan cheese
  • ½ zucchini, grated and squeezed dry
  • 1 large egg, lightly beaten
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup marinara sauce

Instructions

  1. Preheat oven to 400°F. Grease an 8-inch baking dish with oil. Combine beef, ½ cup mozzarella, Parmesan, zucchini, egg, seasoning, salt, and pepper in a large bowl.
  2. Shape mixture into 1-inch meatballs, and place in prepared dish. Bake 25 to 30 minutes or until meatballs are no longer pink in center. Drain, if necessary.
  3. Top meatballs with marinara sauce and ½ cup mozzarella cheese. Bake 10 to 15 minutes or until bubbly.

  1. Cook zucchini noodles, salt, and pepper in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until browned and tender.
