Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 2 Tbsp butter
- ½ (8-oz) pkg sliced mushrooms
- ½ cup shredded whole-milk mozzarella cheese
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper, if desired.
- Cook chicken in hot oil in a nonstick skillet over medium-high heat 4 to 5 minutes per side or until done; remove from skillet, and keep warm.
- Melt butter in same skillet over medium-high heat; add mushrooms, and cook 5 to 6 minutes or until browned. Spoon mushroom mixture over chicken; sprinkle with cheese. Let stand until cheese melts.

- 1 lb green beans, trimmed
- 1½ Tbsp olive oil
- 2 small cloves garlic, sliced
- ¼ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 425°F. Toss together green beans, oil, garlic, pepper, and salt on a rimmed baking sheet; spread in a single layer.
- Bake 12 to 15 minutes, stirring halfway through baking, until green beans are browned and tender.
