Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • ½ (8-oz) pkg sliced mushrooms
  • ½ cup shredded whole-milk mozzarella cheese

Instructions

  1. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper, if desired.
  2. Cook chicken in hot oil in a nonstick skillet over medium-high heat 4 to 5 minutes per side or until done; remove from skillet, and keep warm.
  3. Melt butter in same skillet over medium-high heat; add mushrooms, and cook 5 to 6 minutes or until browned. Spoon mushroom mixture over chicken; sprinkle with cheese. Let stand until cheese melts.

  • 1 lb green beans, trimmed
  • 1½ Tbsp olive oil
  • 2 small cloves garlic, sliced
  • ¼ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together green beans, oil, garlic, pepper, and salt on a rimmed baking sheet; spread in a single layer.
  2. Bake 12 to 15 minutes, stirring halfway through baking, until green beans are browned and tender.
