Loaded Sweet Potato Fries

Ingredients

  • 1½ (20-oz) pkg frozen sweet potato crinkle fries
  • 2 Tbsp olive oil
  • ½ tsp chili powder
  • 12 slices center cut bacon
  • 1½ cups shredded mozzarella cheese
  • 2 green onions, sliced
  • ¾ cup sour cream
  • ¾ cup pico de gallo, drained

Instructions

  1. Preheat oven to 425°F. Toss together fries, oil, and chili powder on 2 large baking sheets; spread in a single layer. Bake 20 to 22 minutes or until crispy.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crispy; crumble bacon.
  3. Divide fries among 6 plates. Top with cheese, bacon, onions, sour cream, and pico.
