Chicken with Apples and Leeks
Lemon Orzo with Goat Cheese

Ingredients
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt, divided
- ½ tsp pepper, divided
- ¼ cup olive oil, divided
- 2 leeks, cleaned and halved lengthwise
- 4 Gala apples, cored and thinly sliced
- 1 Tbsp chopped fresh thyme
Instructions
- Preheat oven to 425°F. Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until lightly browned.
- Meanwhile, slice leeks, using white and light green portion only.
- Divide chicken between 2 large rimmed baking sheets coated with cooking spray. Toss together leeks, apples, thyme, 3 Tbsp oil, and ¼ tsp each salt and pepper. Arrange leek mixture around chicken.
- Bake 20 minutes or until chicken is done and leeks and apples are lightly browned and tender.

- 1 cup orzo
- 2 Tbsp olive oil
- 1 tsp lemon zest
- 2 Tbsp lemon juice
- ½ tsp salt
- ½ tsp pepper
- ¾ cup crumbled goat cheese
Side Dish Instructions
- Cook orzo according to package directions. Toss together orzo and remaining ingredients in a large bowl.
