Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • ¼ cup olive oil, divided
  • 2 leeks, cleaned and halved lengthwise
  • 4 Gala apples, cored and thinly sliced
  • 1 Tbsp chopped fresh thyme

Instructions

  1. Preheat oven to 425°F. Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 2 minutes per side or until lightly browned.
  2. Meanwhile, slice leeks, using white and light green portion only.
  3. Divide chicken between 2 large rimmed baking sheets coated with cooking spray. Toss together leeks, apples, thyme, 3 Tbsp oil, and ¼ tsp each salt and pepper. Arrange leek mixture around chicken.
  4. Bake 20 minutes or until chicken is done and leeks and apples are lightly browned and tender.

  • 1 cup orzo
  • 2 Tbsp olive oil
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • ¾ cup crumbled goat cheese

Side Dish Instructions

  1. Cook orzo according to package directions. Toss together orzo and remaining ingredients in a large bowl.
