Sticky Orange Chicken Meatballs

Ingredients

  • 2 oranges
  • 1½ lb ground chicken
  • 1½ cups panko breadcrumbs
  • ½ cup chopped roasted, salted cashews
  • ½ tsp black pepper
  • 2 large eggs
  • ⅓ cup water
  • 6 Tbsp hoisin sauce
  • 5 Tbsp honey
  • 3 Tbsp rice vinegar

Instructions

  1. Preheat oven to 425°F. Grate 2 tsp zest and squeeze ½ cup juice from oranges.
  2. Combine orange zest, chicken, breadcrumbs, nuts, black pepper, and eggs in a bowl; gently mix together using your hands.
  3. Roll chicken mixture into 1½-inch balls. Place on two large greased rimmed baking sheets. Bake 10 minutes or until meatballs are no longer pink in center, shaking baking sheets after 5 minutes.
  4. Meanwhile, combine orange juice, water, hoisin, honey, and vinegar in a saucepan over medium-high heat. Bring to a boil, and cook 5 minutes or until reduced by one-third. Remove from heat. Toss meatballs with sauce.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 2 Tbsp sesame oil
  • ½ tsp salt, divided
  • 3 green onions, thinly sliced
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook rice according to package directions. Transfer hot cooked rice to a bowl; stir in oil, ¼ tsp salt, and onions.
  2. Cook broccoli according to package directions. Sprinkle with ¼ tsp salt.
