Southwest Nachos
Ingredients
- 1 lb ground sirloin
- ½ tsp ground cumin
- ⅓ cup water
- 1 (15-oz) can black beans, drained and rinsed (or use pinto beans)
- 1 (15-oz) can corn
- 1 (12-oz) pkg tortilla chips
- 1½ cups shredded Cheddar cheese
- 1 (2.25-oz) can sliced black olives, drained
- 1 cup refrigerated salsa
- 3 green onions, sliced
Instructions
- Preheat broiler. Cook beef in a large skillet over medium heat 8 to 10 minutes or until browned and crumbly. Stir in cumin and water; cook 3 minutes or until thickened. Add beans and corn; cook 3 minutes or until thoroughly heated.
- Spread chips on a large rimmed baking sheet. Top with beef mixture, cheese, and olives. Broil 2 minutes or until cheese melts. Top with salsa and onions.
