Skillet Mushroom and Onion Chicken

Ingredients
- 2 lb boneless, skinless chicken thighs
- 2 Tbsp olive oil, divided
- 1 (16-oz) pkg sliced mushrooms
- 1 (10.5-oz) can French onion soup
- 6 slices provolone cheese (or use Gruyère or Swiss)
- 6 Tbsp chopped fresh parsley (optional)
Instructions
- Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Meanwhile, cook mushrooms in 1 Tbsp hot oil in another large skillet over medium-high heat 8 minutes or until browned. Add soup; cook 3 minutes or until thoroughly heated.
- Add chicken to mushroom mixture. Top with cheese, and cook 2 minutes or until cheese melts. Sprinkle with parsley, if desired.
Side Dish Ingredients
- 1½ lb green beans, trimmed
- 3 Tbsp olive oil
- ¾ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Roast 12 to 15 minutes or until beans are tender and browned.
