Cheesy Italian Chicken

Ingredients

  • ¼ lb bacon
  • 1 lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ (8-oz) block cream cheese
  • 1 Tbsp Italian seasoning
  • ½ cup shredded mozzarella cheese
  • 1 Tbsp chopped fresh chives
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F. Cook bacon in a cast-iron skillet over medium heat 10 minutes or until crisp; drain, reserving drippings in skillet. Crumble bacon, and set aside.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season with salt and pepper. Cook chicken in hot drippings over medium-high heat 5 minutes per side or until browned.
  3. Meanwhile, mix cream cheese, seasoning, mozzarella, bacon, chives, and parsley in a medium-size bowl.
  4. Smear cheese spread on chicken in skillet; transfer skillet to oven.
  5. Bake 10 minutes or until chicken is done.

  • ¼ tsp pepper
  • 1 Tbsp avocado oil
  • ½ Tbsp butter

Side Dish Instructions

  1. Cook spinach, bell pepper, salt, and pepper in hot oil and butter in a large skillet over medium heat 5 minutes, stirring occasionally until bell pepper is tender.
