Cheesy Italian Chicken
Sautéed Spinach and Bell PepperIngredients
- ¼ lb bacon
- 1 lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- ½ (8-oz) block cream cheese
- 1 Tbsp Italian seasoning
- ½ cup shredded mozzarella cheese
- 1 Tbsp chopped fresh chives
- 1 Tbsp chopped fresh parsley
Instructions
- Preheat oven to 375°F. Cook bacon in a cast-iron skillet over medium heat 10 minutes or until crisp; drain, reserving drippings in skillet. Crumble bacon, and set aside.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season with salt and pepper. Cook chicken in hot drippings over medium-high heat 5 minutes per side or until browned.
- Meanwhile, mix cream cheese, seasoning, mozzarella, bacon, chives, and parsley in a medium-size bowl.
- Smear cheese spread on chicken in skillet; transfer skillet to oven.
- Bake 10 minutes or until chicken is done.

- ½ Tbsp butter
Side Dish Instructions
- Cook spinach, bell pepper, salt, and pepper in hot oil and butter in a large skillet over medium heat 5 minutes, stirring occasionally until bell pepper is tender.
