Caramelized Onion and Spinach Pasta

Ingredients

  • 1 (12-oz) pkg orecchiette pasta
  • 2 onions, thinly sliced
  • ¼ cup olive oil, divided
  • 2 Tbsp minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup freshly grated Parmesan cheese, divided
  • ½ cup heavy cream
  • 1 (10-oz) pkg baby spinach
  • 3 Tbsp chopped fresh dill

Instructions

  1. Cook pasta according to package directions, reserving ¾ cup pasta water.
  2. Meanwhile, cook onions in 2 Tbsp hot oil in a large skillet over medium heat 15 minutes or until browned and tender, stirring occasionally.
  3. Add garlic, salt, and pepper; cook 1 minute or until fragrant. Add ½ cup pasta water, ½ cup cheese, cream, and spinach; cook 2 minutes or until sauce thickens and spinach wilts, adding additional ¼ cup pasta water, if needed, to reach desired sauce consistency.
  4. Serve onion mixture over pasta; sprinkle with ½ cup cheese and dill.
