Caramelized Onion and Spinach Pasta

Ingredients
- 1 (12-oz) pkg orecchiette pasta
- 2 onions, thinly sliced
- ¼ cup olive oil, divided
- 2 Tbsp minced garlic
- ½ tsp salt
- ½ tsp pepper
- 1 cup freshly grated Parmesan cheese, divided
- ½ cup heavy cream
- 1 (10-oz) pkg baby spinach
- 3 Tbsp chopped fresh dill
Instructions
- Cook pasta according to package directions, reserving ¾ cup pasta water.
- Meanwhile, cook onions in 2 Tbsp hot oil in a large skillet over medium heat 15 minutes or until browned and tender, stirring occasionally.
- Add garlic, salt, and pepper; cook 1 minute or until fragrant. Add ½ cup pasta water, ½ cup cheese, cream, and spinach; cook 2 minutes or until sauce thickens and spinach wilts, adding additional ¼ cup pasta water, if needed, to reach desired sauce consistency.
- Serve onion mixture over pasta; sprinkle with ½ cup cheese and dill.
