Chocolate Layer Cake
Ingredients
- 2 cups all-purpose flour
- ¾ cup unsweetened baking cocoa
- 1½ tsp baking soda
- ½ tsp baking powder
- 1 Tbsp espresso powder
- 1 tsp salt
- 1½ cups sugar
- ⅔ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1¼ cups buttermilk
- 2 (16-oz) containers chocolate frosting
Instructions
- Preheat oven to 350°F; coat two 8-inch round cake pans with cooking spray.
- Whisk together flour, cocoa, baking soda, baking powder, espresso, and salt. Set aside.
- Combine sugar, oil, eggs, and vanilla; beat at medium speed with an electric mixer until blended. Add half of flour mixture and half of buttermilk to sugar mixture. Mix until ingredients are just blended.
- Repeat with remaining flour mixture and buttermilk; mix well. Pour batter into pans.
- Bake 30 to 35 minutes or until a wooden pick inserted in center of each layer comes out clean. Cool in pans 10 minutes; transfer to a wire rack to cool completely.
- Place one layer on a plate or cake stand. Frost top of layer; top with second layer, and frost top and sides of cake.
