Chocolate Layer Cake

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup unsweetened baking cocoa
  • 1½ tsp baking soda
  • ½ tsp baking powder
  • 1 Tbsp espresso powder
  • 1 tsp salt
  • 1½ cups sugar
  • ⅔ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1¼ cups buttermilk
  • 2 (16-oz) containers chocolate frosting

Instructions

  1. Preheat oven to 350°F; coat two 8-inch round cake pans with cooking spray.
  2. Whisk together flour, cocoa, baking soda, baking powder, espresso, and salt. Set aside.
  3. Combine sugar, oil, eggs, and vanilla; beat at medium speed with an electric mixer until blended. Add half of flour mixture and half of buttermilk to sugar mixture. Mix until ingredients are just blended.
  4. Repeat with remaining flour mixture and buttermilk; mix well. Pour batter into pans.
  5. Bake 30 to 35 minutes or until a wooden pick inserted in center of each layer comes out clean. Cool in pans 10 minutes; transfer to a wire rack to cool completely.
  6. Place one layer on a plate or cake stand. Frost top of layer; top with second layer, and frost top and sides of cake.
