Double-Chocolate Skillet Brownie

Ingredients

  • 1½ cups semisweet chocolate chips
  • ½ cup unsalted butter
  • ¾ cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp instant espresso powder
  • ½ cup all-purpose flour
  • ½ cup unsweetened baking cocoa
  • 1 tsp baking powder
  • ½ tsp salt
  • Vanilla ice cream (optional)

Instructions

  1. Preheat oven to 350°F. Heat chocolate and butter in a large bowl set over a saucepan of simmering water until melted; remove from heat, and cool 15 minutes.
  2. Whisk in sugar, eggs, vanilla, and espresso until blended. Fold in flour, cocoa, baking powder, and salt, stirring until just combined. Pour batter into a large greased cast-iron skillet.
  3. Bake 20 to 25 minutes or until a wooden pick inserted comes out almost clean. If desired, serve with ice cream.
