Chocolate Brownie Truffles

Ingredients

  • 1 (16-oz) pkg fudge brownie mix
  • 1 cup bittersweet chocolate chips
  • 1 tsp coconut oil
  • ½ tsp salt

Instructions

  1. Prepare and bake brownies according to package directions. Cool completely on a wire rack.
  2. Place cooled brownies in a large bowl, and stir until smooth using a wooden spoon. Line a baking sheet with parchment paper.
  3. Using a small cookie scoop or ice cream scoop, scoop out small brownie balls, and roll into round balls; place on prepared baking sheet. Chill 1 hour or until firm.
  4. Meanwhile, combine chocolate and oil in a small bowl; microwave in 30-second intervals until melted and smooth.
  5. Dip each brownie ball into chocolate, and return to pan. Sprinkle each truffle with salt, and chill 15 minutes longer or until chocolate is hardened.
