Bacon-Ranch Potato Wedges

Ingredients

  • ½ (2-lb) pkg frozen deli-style potato wedges
  • 1 Tbsp olive oil
  • 1 Tbsp Ranch dressing mix
  • 6 slices bacon, chopped
  • 1 cup shredded colby-Jack cheese
  • 1 cup refrigerated salsa, drained
  • ½ cup sour cream
  • 1 green onion, thinly sliced

Instructions

  1. Preheat oven to 425°F. Spread frozen potatoes in a single layer on a rimmed baking sheet. Bake 15 to 20 minutes. Toss with oil and Ranch dressing mix while still hot.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Sprinkle bacon over fries; sprinkle with cheese.
  3. Bake 3 minutes or until cheese melts. Top with salsa, sour cream, and onions.
