Vegetable Noodle Bowl

Ingredients

  • 1 (8.4-oz) pkg organic ramen noodles
  • 1 (12-oz) pkg broccoli florets
  • 1 large red bell pepper, sliced
  • 3 green onions, sliced and divided
  • 2 cloves garlic, sliced
  • 2 Tbsp sesame oil
  • 1 (32-oz) carton low-sodium vegetable broth
  • 1 (16-oz) pkg frozen peas and carrots
  • 3 Tbsp vegan hoisin sauce
  • 2 Tbsp low-sodium soy sauce

Instructions

  1. Prepare noodles according to package directions. Chop broccoli into bite-size pieces.
  2. Meanwhile, cook bell pepper, white parts of green onions, and garlic in hot oil in a large Dutch oven over medium heat 5 minutes.
  3. Stir in broth, peas and carrots, broccoli, hoisin sauce, and soy sauce; bring to a boil, reduce heat, and simmer 8 minutes.
  4. Stir in green onion tops and noodles; simmer 2 minutes.
