Vegetable Noodle Bowl

Ingredients
- 1 (8.4-oz) pkg organic ramen noodles
- 1 (12-oz) pkg broccoli florets
- 1 large red bell pepper, sliced
- 3 green onions, sliced and divided
- 2 cloves garlic, sliced
- 2 Tbsp sesame oil
- 1 (32-oz) carton low-sodium vegetable broth
- 1 (16-oz) pkg frozen peas and carrots
- 3 Tbsp vegan hoisin sauce
- 2 Tbsp low-sodium soy sauce
Instructions
- Prepare noodles according to package directions. Chop broccoli into bite-size pieces.
- Meanwhile, cook bell pepper, white parts of green onions, and garlic in hot oil in a large Dutch oven over medium heat 5 minutes.
- Stir in broth, peas and carrots, broccoli, hoisin sauce, and soy sauce; bring to a boil, reduce heat, and simmer 8 minutes.
- Stir in green onion tops and noodles; simmer 2 minutes.
