Cranberry-Maple Baked Chicken
Sautéed SpinachIngredients
- ½ cup cranberries, divided
- 1 Tbsp olive oil
- 1 Tbsp maple syrup
- 1 Tbsp balsamic vinegar
- ½ tsp salt, divided
- 2 small cloves garlic, halved
- 1 lb boneless, skinless chicken breasts
- ¾ tsp dried thyme
- ¾ tsp Italian seasoning
Instructions
- Preheat oven to 375°F. Process ⅓ cup cranberries, oil, syrup, vinegar, ¼ tsp salt, and garlic in a food processor until pureed, scraping sides as needed.
- Sprinkle ¼ tsp salt over chicken. Place in a 11- x 7-inch baking dish; pour cranberry mixture over chicken. Top with remaining cranberries, thyme, and Italian seasoning. Bake 20 minutes or until chicken is done.

- ½ onion, chopped
- 2 small cloves garlic, minced
- 1 Tbsp olive oil
- 1 (5-oz) pkg baby spinach
- ⅛ tsp salt
- ⅛ tsp pepper
- 3 Tbsp chopped walnuts
Side Dish Instructions
- Cook onion and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until onion is lightly browned.
- Add spinach, salt, and pepper; cook 2 to 3 minutes or until spinach wilts. Top with nuts.
