Smoked Salmon Latke (Potato Pancake)
Citrus-Pear TossIngredients
- 2 Tbsp olive oil, divided
- 1 (20-oz) pkg refrigerated shredded hash browns
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 1 (5-oz) pkg baby arugula
- 1 (4-oz) pkg sliced smoked salmon
- 1 (8-oz) carton crème fraîche (or use plain Greek yogurt)
- 1 Tbsp prepared horseradish
- 1 small red onion, thinly sliced
- 2 Tbsp drained capers
Instructions
- Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat; add hash browns, spreading in an even layer.
- Sprinkle with ½ tsp each salt and pepper, and press down with a spatula. Cook 6 to 7 minutes or until browned; drizzle with 1 Tbsp oil.
- Gently turn, and sprinkle with ¼ tsp each salt and pepper.
- Cook 6 minutes or until browned; slide onto a serving plate. Top with arugula and salmon.
- Stir together crème fraîche and horseradish; drizzle over salmon, and top with onion and capers. Cut into wedges before serving.
Side Dish Ingredients
- 3 navel oranges, peeled and sectioned
- 3 pears, chopped
- 2 Tbsp lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Toss together all ingredients in a bowl. Chill 30 minutes or until ready to serve.
