Smoked Salmon Latke (Potato Pancake)

Ingredients

  • 2 Tbsp olive oil, divided
  • 1 (20-oz) pkg refrigerated shredded hash browns
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 1 (5-oz) pkg baby arugula
  • 1 (4-oz) pkg sliced smoked salmon
  • 1 (8-oz) carton crème fraîche (or use plain Greek yogurt)
  • 1 Tbsp prepared horseradish
  • 1 small red onion, thinly sliced
  • 2 Tbsp drained capers

Instructions

  1. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat; add hash browns, spreading in an even layer.
  2. Sprinkle with ½ tsp each salt and pepper, and press down with a spatula. Cook 6 to 7 minutes or until browned; drizzle with 1 Tbsp oil.
  3. Gently turn, and sprinkle with ¼ tsp each salt and pepper.
  4. Cook 6 minutes or until browned; slide onto a serving plate. Top with arugula and salmon.
  5. Stir together crème fraîche and horseradish; drizzle over salmon, and top with onion and capers. Cut into wedges before serving.

Side Dish Ingredients

  • 3 navel oranges, peeled and sectioned
  • 3 pears, chopped
  • 2 Tbsp lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Chill 30 minutes or until ready to serve.
