Ingredients

  • ½ lb ground chicken
  • ⅓ cup panko breadcrumbs
  • 3 Tbsp chopped walnuts
  • 1 large egg yolk, lightly beaten
  • 2¼ tsp smoked paprika, divided
  • ⅛ tsp salt
  • 2 Tbsp butter
  • 1 Tbsp honey
  • ½ tsp cayenne pepper (see Note)

Instructions

  1. Preheat oven to 425°F. Gently mix together chicken, breadcrumbs, nuts, egg yolk, 2 tsp paprika, and salt in a bowl using your hands.
  2. Roll chicken mixture into 1½-inch balls. Place on a greased rimmed baking sheet. Bake 15 minutes or until meatballs are no longer pink in center, shaking pan after 5 minutes.
  3. Meanwhile, cook butter, honey, cayenne, and ¼ tsp paprika in a small saucepan over medium-low heat until better melts. Drizzle sauce over meatballs before serving.

  • 1 cup refrigerated mashed potatoes
  • 2 Tbsp mayonnaise
  • 2 tsp dill pickle juice
  • ¼ tsp sugar
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • ⅛ tsp dried dill (optional)
  • 2 cups tricolor coleslaw
  • ¼ cup sliced or chopped dill pickles

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Meanwhile, combine mayonnaise, pickle juice, sugar, garlic powder, pepper, and, if desired, dried dill in a medium-size bowl. Add coleslaw and pickles; toss.
