Ingredients

  • 4 oz whole-grain penne pasta
  • 4 oz Italian turkey sausage, casings removed
  • 1 (14.5-oz) can BPA-free organic no-salt-added diced tomatoes
  • 1 (6-oz) can BPA-free tomato paste
  • ¼ cup ricotta cheese
  • 1 Tbsp pesto
  • ½ cup shredded mozzarella cheese
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F. Cook pasta according to package directions.
  2. Meanwhile, cook turkey sausage in a large skillet over medium-high heat until browned and crumbly; drain.
  3. Combine tomatoes, tomato paste, ricotta cheese, pesto, pasta, and sausage; spoon mixture into a greased 2-quart baking dish. Sprinkle with mozzarella and Parmesan cheeses.
  4. Bake 30 to 35 minutes or until cheese is melted and edges are bubbly.

Side Dish Ingredients

  • ½ (14.1-oz) can BPA-free hearts of palm, drained and rinsed
  • 2 cups baby arugula (or use baby spinach)
  • 1 Tbsp olive oil
  • 2 tsp red wine vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Slice hearts of palm. Toss together all ingredients in a bowl.
