Baked Italian Turkey Sausage Pasta

Ingredients
- 4 oz whole-grain penne pasta
- 4 oz Italian turkey sausage, casings removed
- 1 (14.5-oz) can BPA-free organic no-salt-added diced tomatoes
- 1 (6-oz) can BPA-free tomato paste
- ¼ cup ricotta cheese
- 1 Tbsp pesto
- ½ cup shredded mozzarella cheese
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Preheat oven to 375°F. Cook pasta according to package directions.
- Meanwhile, cook turkey sausage in a large skillet over medium-high heat until browned and crumbly; drain.
- Combine tomatoes, tomato paste, ricotta cheese, pesto, pasta, and sausage; spoon mixture into a greased 2-quart baking dish. Sprinkle with mozzarella and Parmesan cheeses.
- Bake 30 to 35 minutes or until cheese is melted and edges are bubbly.
Side Dish Ingredients
- ½ (14.1-oz) can BPA-free hearts of palm, drained and rinsed
- 2 cups baby arugula (or use baby spinach)
- 1 Tbsp olive oil
- 2 tsp red wine vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Slice hearts of palm. Toss together all ingredients in a bowl.
