Easy Italian Salad

Ingredients

  • 1 (28-oz) can crushed tomatoes
  • ¼ cup olive oil
  • 1 tsp dried basil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 (16-oz) pkg fettuccine
  • ¼ cup grated Parmesan cheese
  • ¼ cup butter

Instructions

  1. Stir together tomatoes, oil, basil, onion powder, and garlic powder in a large Dutch oven. Cook over medium heat, stirring occasionally, 10 minutes or until slightly thickened.
  2. Meanwhile, cook pasta according to package directions, cooking 2 minutes less than package directs; drain, reserving ½ cup pasta water.
  3. Bring pasta water to a boil in pasta pot over medium-high heat. Stir in pasta, and cook until liquid is absorbed. Add cheese and butter, stirring until melted. Add tomato mixture; toss.
  4. Divide pasta among 6 shallow bowls.

Side Dish Ingredients

  • 2 (10-oz) pkg chopped romaine lettuce
  • ⅓ cup Italian vinaigrette
  • ½ cup grated Parmesan cheese
  • 1 (5-oz) pkg garlic-butter croutons

Side Dish Instructions

  1. Toss together all ingredients in a large bowl just before serving.
