Greek Lemon Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 2 cups chicken broth
- 2 Tbsp lemon juice
- 1 tsp dried oregano
- 1 Tbsp cornstarch
- 2 Tbsp cold water
Instructions
- Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper, if desired.
- Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Add broth, lemon juice, and oregano; cook 5 minutes or until chicken is done. Remove chicken from skillet, and keep warm.
- Stir together cornstarch and cold water; add to skillet, and cook until sauce is thickened. Spoon sauce over chicken.

- 2 Tbsp butter
- 2 cups long-grain white rice
- 1 (32-oz) carton chicken broth
- 1 lemon
- 2 (12-oz) pkg broccoli florets
Side Dish Instructions
- Melt butter in a large saucepan over medium heat; add rice, and cook 1 minute. Stir in broth. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
- Grate zest from lemon into hot rice; toss.
- Steam broccoli according to package directions.
