Greek Lemon Chicken

Rice Pilaf and Steamed Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts 
  • 2 Tbsp olive oil
  • 2 cups chicken broth
  • 2 Tbsp lemon juice
  • 1 tsp dried oregano
  • 1 Tbsp cornstarch
  • 2 Tbsp cold water

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper, if desired.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Add broth, lemon juice, and oregano; cook 5 minutes or until chicken is done. Remove chicken from skillet, and keep warm.
  3. Stir together cornstarch and cold water; add to skillet, and cook until sauce is thickened. Spoon sauce over chicken.

Side Dish Ingredients

  • 2 Tbsp butter
  • 2 cups long-grain white rice
  • 1 (32-oz) carton chicken broth
  • 1 lemon
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Melt butter in a large saucepan over medium heat; add rice, and cook 1 minute. Stir in broth. Bring to a boil, cover, reduce heat, and simmer 18 to 20 minutes or until rice is tender.
  2. Grate zest from lemon into hot rice; toss.
  3. Steam broccoli according to package directions.
