Pork Chops with Mushroom Gravy
Orange Broccoli
Ingredients
- 3 (1-inch-thick) bone-in pork chops
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup chopped onion
- 1 clove garlic, minced
- ½ cup heavy cream
- ¼ cup beef broth
- 1 Tbsp olive oil
- ½ Tbsp low-sodium soy sauce
- ½ Tbsp Dijon mustard
- 1 (8-oz) pkg sliced mushrooms
- ½ tsp cornstarch
- 1 Tbsp cold water
Instructions
- Sprinkle pork with salt and pepper; place in a 3-or 4-quart slow cooker.
- Stir together onion, garlic, cream, broth, oil, soy sauce, and mustard; pour over pork. Top with mushrooms.
- Cover and cook on LOW 7 hours or until pork is tender. Remove pork from cooker; cover to keep warm. Whisk together cornstarch and water; add to cooker. Increase heat to HIGH; cover and cook 15 minutes or until gravy is thickened. Serve mushroom gravy over pork.

- 1 (12-oz) pkg broccoli florets
- 1½ Tbsp olive oil
- ½ tsp orange zest
- 1 Tbsp fresh orange juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook broccoli in hot oil in a large skillet over medium-high heat 6 minutes or until crisp-tender. Stir in orange zest, orange juice, salt, and pepper.
