Vegetable Tikka Masala

Ingredients

  • 3 (3.5-oz) pouches boil-in-bag jasmine rice
  • 2 (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
  • 1 (16-oz) pkg sliced mushrooms
  • 3 Tbsp olive oil
  • 1 (15-oz) jar tikka masala simmer sauce
  • 1 cup chopped peanuts
  • ½ cup chopped fresh cilantro (optional)

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook vegetables and mushrooms in hot oil in a large skillet over medium-high heat 8 minutes or until lightly browned and tender.
  3. Reduce heat to medium, add simmer sauce, and cook 3 minutes or until thoroughly heated. Stir in nuts. Serve over rice, and, if desired, sprinkle with cilantro.
