Lemon-Basil Linguine with Sweet Peas
Ingredients
- 1 (16-oz) pkg linguine
- 1 (12-oz) pkg frozen sweet peas
- 4 Tbsp olive oil, divided
- 4 cloves garlic, minced
- ½ tsp salt
- ½ tsp crushed red pepper
- ½ cup julienne-cut sun-dried tomatoes
- 2 tsp lemon zest
- 2 Tbsp fresh lemon juice
- 1 cup shredded Parmesan cheese
- 3 Tbsp chopped fresh basil
Instructions
- Cook pasta according to package directions until al dente; drain, reserving 1 cup pasta water.
- Meanwhile, cook peas in 2 Tbsp hot oil in a Dutch oven over medium-high heat 3 minutes. Add garlic, salt, and red pepper; cook 1 minute. Remove from pot.
- Bring reserved 1 cup pasta water and 2 Tbsp oil to a boil in Dutch oven; boil 1 minute. Add pasta and tomatoes; cook 1 minute or until slightly creamy.
- Add lemon zest, juice, and peas to pasta mixture; toss. Sprinkle with cheese and basil just before serving.
