Spicy Orange-Glazed Tofu
Rice Noodles
Ingredients
- 1 (14-oz) pkg extra-firm tofu, drained
- 6 Tbsp fresh orange juice
- 1 Tbsp soy sauce
- ⅛ tsp crushed red pepper
- 1 cup shredded carrots
- 1 Tbsp olive oil
- 2 green onions, thinly sliced
- 2 Tbsp chopped fresh cilantro
Instructions
- Place tofu on several layers of paper towels. Cover with additional paper towels, and gently press out moisture. Let stand 15 minutes. Cut into cubes.
- Bring orange juice, soy sauce, and red pepper to a simmer in a saucepan over high heat. Reduce heat, and simmer 3 to 4 minutes or until syrupy. Stir in carrots.
- Meanwhile, cook tofu in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until golden brown. Toss orange mixture with tofu; sprinkle with onions and cilantro.
