Spicy Orange-Glazed Tofu

Ingredients

  • 1 (14-oz) pkg extra-firm tofu, drained
  • 6 Tbsp fresh orange juice
  • 1 Tbsp soy sauce
  • ⅛ tsp crushed red pepper
  • 1 cup shredded carrots
  • 1 Tbsp olive oil
  • 2 green onions, thinly sliced
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Place tofu on several layers of paper towels. Cover with additional paper towels, and gently press out moisture. Let stand 15 minutes. Cut into cubes.
  2. Bring orange juice, soy sauce, and red pepper to a simmer in a saucepan over high heat. Reduce heat, and simmer 3 to 4 minutes or until syrupy. Stir in carrots.
  3. Meanwhile, cook tofu in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until golden brown. Toss orange mixture with tofu; sprinkle with onions and cilantro.
