Ingredients

  • ½ lb lean ground beef
  • ¼ cup diced onion
  • 1 Tbsp olive oil, divided
  • ⅓ cup pimiento cheese
  • 4 slices whole wheat bread

Instructions

  1. Cook beef and onion in ½ Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly.
  2. Divide beef mixture between 2 bread slices; top with pimiento cheese and remaining bread slices. Wipe skillet clean.
  3. Cook sandwiches in ½ Tbsp hot oil in same skillet 3 to 4 minutes per side or until bread is toasted and cheese melts.

  • 2 cups arugula
  • 1 Roma tomato, chopped
  • ⅓ cup shredded carrots
  • 2 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a medium-size bowl.
