Pimiento Cheese and Beef Melts

Ingredients
- ½ lb lean ground beef
- ¼ cup diced onion
- 1 Tbsp olive oil, divided
- ⅓ cup pimiento cheese
- 4 slices whole wheat bread
Instructions
- Cook beef and onion in ½ Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly.
- Divide beef mixture between 2 bread slices; top with pimiento cheese and remaining bread slices. Wipe skillet clean.
- Cook sandwiches in ½ Tbsp hot oil in same skillet 3 to 4 minutes per side or until bread is toasted and cheese melts.
Side Dish Ingredients
- 2 cups arugula
- 1 Roma tomato, chopped
- ⅓ cup shredded carrots
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a medium-size bowl.
