Bell Pepper Nachos
Ingredients
- 1 red bell pepper, cut into 1-inch-thick slices
- 1 green bell pepper, cut into 1-inch-thick slices
- 1 yellow bell pepper, cut into 1-inch-thick slices
- 1 lb ground beef
- ¼ cup water
- 1 Tbsp chili powder
- ½ Tbsp ground cumin
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp pepper
- 1 cup shredded Monterey Jack cheese
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 400°F. Arrange peppers, skin side down, on a parchment paper-lined large baking sheet.
- Cook beef, water, chili powder, cumin, paprika, salt, and pepper in a large skillet over medium heat until beef is browned and crumbly. Spoon 1 Tbsp beef onto each pepper; sprinkle with cheese.
- Bake 10 to 15 minutes or until cheese is melted. Sprinkle with cilantro.
