Grilled Chicken and Fruit Salad
Italian Flatbread Crackers
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1 Tbsp Montreal steak seasoning
- 2 Tbsp olive oil
- 1 (10-oz) pkg spring mix
- 1 (15-oz) can mandarin oranges, drained
- 1 (16-oz) container strawberries, sliced
- 2 Honeycrisp apples, cored and chopped
- 1 pint blueberries
- ½ cup olive oil vinaigrette
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with seasoning. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done; let stand 5 minutes, and cut into bite-sized pieces.
- Toss together spring mix, oranges, strawberries, apples, blueberries, and vinaigrette in a large bowl. Divide salad among 6 plates. Top with chicken.
