Apricot-Glazed Shrimp
Steamed Rice and Roasted BroccoliIngredients
- ½ cup apricot preserves
- 3 Tbsp chopped fresh basil
- 3 Tbsp low-sodium soy sauce
- 1 tsp garlic powder
- 2 lb peeled and deveined, large raw shrimp
- 2 Tbsp olive oil
Instructions
- Stir together preserves, basil, soy sauce, and garlic powder in a small bowl.
- Cook shrimp in hot oil in a large nonstick skillet over medium-high heat 2 minutes or until shrimp begin to turn pink. Add apricot mixture, and cook, stirring, 2 minutes or until shrimp turn pink.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 3 Tbsp olive oil
- 2 cups long-grain white rice
Side Dish Instructions
- Preheat oven to 400°F. Toss together broccoli and oil on a rimmed baking sheet. Bake 15 minutes or until browned and tender; season with salt and pepper, if desired.
- Meanwhile, cook rice according to package directions; season with salt and pepper, if desired.
