Creamy Ranch Chicken
Brown Rice and Vegetables
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¾ cup low-sodium chicken broth
- ¾ cup heavy cream
- 1 (1-oz) envelope Ranch dressing mix
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until browned.
- Reduce heat to medium. Add broth, cream, and dressing mix; cook 4 minutes or until sauce is thickened and chicken is done.

- 3 (3.5-oz) pouches boil-in-bag brown rice
- 1 (12-oz) pkg frozen mixed vegetables (carrots, green beans, corn, and peas)
- 1½ tsp Italian seasoning
Side Dish Instructions
- Cook rice and vegetables according to package directions. Toss vegetables with Italian seasoning in a bowl.
