Lemony Ricotta-Green Pea Pasta

Ingredients
- 12 oz penne pasta
- 1 (12-oz) pkg frozen green peas
- 1 lemon
- 1 (15-oz) carton whole-milk ricotta cheese
- 1 (0.5-oz) pkg fresh mint (or use basil or parsley)
- ¼ cup olive oil
- ½ tsp salt
- ½ tsp pepper
- 1½ cups grated Parmesan cheese
Instructions
- Cook pasta and green peas according to package directions.
- Meanwhile, grate zest and squeeze juice from lemon. Place lemon zest, lemon juice, ricotta, mint, oil, salt, and pepper in a blender or food processor; process until blended, adding water if needed to reach a saucy consistency.
- Toss together pasta, peas, and ricotta mixture. Sprinkle with Parmesan.
