Lemony Ricotta-Green Pea Pasta

Ingredients

  • 12 oz penne pasta
  • 1 (12-oz) pkg frozen green peas
  • 1 lemon
  • 1 (15-oz) carton whole-milk ricotta cheese
  • 1 (0.5-oz) pkg fresh mint (or use basil or parsley)
  • ¼ cup olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ cups grated Parmesan cheese

Instructions

  1. Cook pasta and green peas according to package directions.
  2. Meanwhile, grate zest and squeeze juice from lemon. Place lemon zest, lemon juice, ricotta, mint, oil, salt, and pepper in a blender or food processor; process until blended, adding water if needed to reach a saucy consistency.
  3. Toss together pasta, peas, and ricotta mixture. Sprinkle with Parmesan.
