Blackberry-Raspberry Shrub

Ingredients

  • ⅔ cup blackberries
  • ⅔ cup raspberries
  • 1½ cups granulated sugar
  • 1 cup natural rice vinegar (not seasoned)
  • ½ cup water
  • 6 cups berry-flavored sparkling water, chilled

Instructions

  1. Place berries in a 1-quart jar; set aside. Bring sugar, vinegar, and water to a boil in a small saucepan over medium heat, stirring constantly until sugar dissolves.
  2. Pour sugar mixture over fruit, and gently stir. Use a wooden spoon to crush berries. Cool to room temperature, seal jar, and store in refrigerator 8 hours or up to 3 days.
  3. Strain berry mixture twice through a fine mesh sieve. (Shrub makes 2 cups.) For each drink, pour 3 to 4 Tbsp shrub into a Collins glass filled half full with ice; top with sparkling water. Store any remaining shrub in refrigerator up to 1 month.
