Blackberry-Raspberry Shrub
Ingredients
- ⅔ cup blackberries
- ⅔ cup raspberries
- 1½ cups granulated sugar
- 1 cup natural rice vinegar (not seasoned)
- ½ cup water
- 6 cups berry-flavored sparkling water, chilled
Instructions
- Place berries in a 1-quart jar; set aside. Bring sugar, vinegar, and water to a boil in a small saucepan over medium heat, stirring constantly until sugar dissolves.
- Pour sugar mixture over fruit, and gently stir. Use a wooden spoon to crush berries. Cool to room temperature, seal jar, and store in refrigerator 8 hours or up to 3 days.
- Strain berry mixture twice through a fine mesh sieve. (Shrub makes 2 cups.) For each drink, pour 3 to 4 Tbsp shrub into a Collins glass filled half full with ice; top with sparkling water. Store any remaining shrub in refrigerator up to 1 month.
