- 1½ lb ground sirloin
- 1 (1-oz) envelope low-sodium taco seasoning
- 2 red or green bell peppers, chopped
- 1 onion, diced
- 1 (10-oz) can diced tomatoes with green chiles
- 1½ cups shredded Monterey Jack cheese
- 2 avocados, diced
Instructions
- Cook rice according to package directions.
- Meanwhile, sprinkle beef with taco seasoning; cook in a large skillet coated with cooking spray over medium-high heat 8 minutes or until browned and crumbly.
- Add bell peppers, onion, and tomatoes; cook 5 minutes or until vegetables are tender. Stir in rice.
- Sprinkle with cheese; cover and cook 1 minute or until cheese melts. Top with avocado.
