Baked Italian Turkey Sausage Pasta

Ingredients
- 1 (16-oz) pkg whole-grain penne pasta
- 1 (19.5-oz) pkg Italian turkey sausage, casings removed
- 1 (28-oz) can BPA-free organic no-salt-added diced tomatoes
- 2 (6-oz) cans BPA-free tomato paste
- 1 (15-oz) carton ricotta cheese
- 3 Tbsp pesto
- 1 cup shredded mozzarella cheese
- ¼ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 375°F. Cook pasta according to package directions.
- Meanwhile, cook turkey sausage in a large skillet over medium-high heat until browned and crumbly; drain.
- Combine tomatoes, tomato paste, ricotta cheese, pesto, pasta, and sausage; spoon mixture into a greased 13- x 9-inch baking dish. Sprinkle with mozzarella and Parmesan cheeses.
- Bake 30 to 35 minutes or until cheese is melted and edges are bubbly.

- 1 (14.1-oz) can BPA-free hearts of palm, drained and rinsed
- 4 cups baby arugula (or use baby spinach)
- 3 Tbsp olive oil
- 2 Tbsp red wine vinegar
- ¼ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Slice hearts of palm. Toss together all ingredients in a bowl.
