White Bean Burgers

Roasted Eggplant Salad with Tomato and Goat Cheese

Ingredients

  • 1 cup fresh basil leaves, divided
  • 2 cloves garlic
  • 1 cup freshly grated Parmesan cheese
  • 2 (15-oz) cans organic unsalted cannellini beans, drained and rinsed
  • 1 cup whole wheat panko breadcrumbs, divided
  • 2 large eggs
  • ½ cup roasted red peppers, chopped
  • ½ cup pitted kalamata olives, chopped
  • 2 green onions, chopped
  • ¼ cup olive oil

Instructions

  1. Process ½ cup basil and garlic in a food processor until smooth. Add cheese, 1 can of beans, ½ cup breadcrumbs, and eggs; process until blended.
  2. Mash remaining beans with a fork in a large bowl; stir in basil mixture. Shape into 6 patties using wet hands.
  3. Place ½ cup breadcrumbs in a shallow dish; dredge patties in breadcrumbs. Place on a baking sheet; chill 10 minutes.
  4. Chop ½ cup basil. Stir together chopped basil, roasted peppers, olives, and onions in a bowl.
  5. Cook patties in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned. Serve with relish.

Side Dish Ingredients

  • 3 eggplants, cut into chunks
  • ½ cup olive oil, divided
  • 1 tsp pepper, divided
  • ½ tsp salt, divided
  • 2 Tbsp balsamic vinegar
  • 1 (10-oz) pkg mixed baby greens
  • 2 large organic tomatoes, cut into wedges
  • 1 (4-oz) log goat cheese, crumbled

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together eggplant, ¼ cup oil, ½ tsp pepper, and ¼ tsp salt on a greased rimmed baking sheet.
  2. Bake 20 minutes or until browned and tender.
  3. Whisk together ¼ cup oil, vinegar, ½ tsp pepper, and ¼ tsp salt in a small bowl.
  4. Arrange greens on a platter; top with eggplant, tomatoes, and cheese. Drizzle with dressing just before serving.
