White Bean Burgers
Roasted Eggplant Salad with Tomato and Goat Cheese
Ingredients
- 1 cup fresh basil leaves, divided
- 2 cloves garlic
- 1 cup freshly grated Parmesan cheese
- 2 (15-oz) cans organic unsalted cannellini beans, drained and rinsed
- 1 cup whole wheat panko breadcrumbs, divided
- 2 large eggs
- ½ cup roasted red peppers, chopped
- ½ cup pitted kalamata olives, chopped
- 2 green onions, chopped
- ¼ cup olive oil
Instructions
- Process ½ cup basil and garlic in a food processor until smooth. Add cheese, 1 can of beans, ½ cup breadcrumbs, and eggs; process until blended.
- Mash remaining beans with a fork in a large bowl; stir in basil mixture. Shape into 6 patties using wet hands.
- Place ½ cup breadcrumbs in a shallow dish; dredge patties in breadcrumbs. Place on a baking sheet; chill 10 minutes.
- Chop ½ cup basil. Stir together chopped basil, roasted peppers, olives, and onions in a bowl.
- Cook patties in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned. Serve with relish.
Side Dish Ingredients
- 3 eggplants, cut into chunks
- ½ cup olive oil, divided
- 1 tsp pepper, divided
- ½ tsp salt, divided
- 2 Tbsp balsamic vinegar
- 1 (10-oz) pkg mixed baby greens
- 2 large organic tomatoes, cut into wedges
- 1 (4-oz) log goat cheese, crumbled
Side Dish Instructions
- Preheat oven to 425°F. Toss together eggplant, ¼ cup oil, ½ tsp pepper, and ¼ tsp salt on a greased rimmed baking sheet.
- Bake 20 minutes or until browned and tender.
- Whisk together ¼ cup oil, vinegar, ½ tsp pepper, and ¼ tsp salt in a small bowl.
- Arrange greens on a platter; top with eggplant, tomatoes, and cheese. Drizzle with dressing just before serving.
