Chicken Cobb Salad

Ingredients

  • 6 slices uncured bacon
  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 (5-oz) pkg organic baby spinach
  • 1 cup chopped fresh basil
  • 1 avocado, diced
  • 3 organic tomatoes, thinly sliced
  • 4 hard-cooked large eggs, chilled and halved
  • ¾ cup crumbled blue cheese (3 oz)

Instructions

  1. Cook bacon in a large skillet over medium-high heat until crisp. Drain and crumble bacon.
  2. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in skillet over medium-high heat 4 to 5 minutes per side or until done. Cool and chop chicken.
  3. Divide lettuce and remaining ingredients among 6 bowls. Top with bacon, chicken, and Avocado-Lemon Dressing recipe.

Side Dish Ingredients

  • 1 avocado, diced
  • ⅓ cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cloves garlic, minced
  • ⅓ cup water

Side Dish Instructions

  1. Process all ingredients in a food processor until smooth.
