Chicken Cobb Salad
Avocado-Lemon DressingIngredients
- 6 slices uncured bacon
- 1½ lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp olive oil
- 1 (10-oz) pkg chopped romaine lettuce
- 1 (5-oz) pkg organic baby spinach
- 1 cup chopped fresh basil
- 1 avocado, diced
- 3 organic tomatoes, thinly sliced
- 4 hard-cooked large eggs, chilled and halved
- ¾ cup crumbled blue cheese (3 oz)
Instructions
- Cook bacon in a large skillet over medium-high heat until crisp. Drain and crumble bacon.
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in skillet over medium-high heat 4 to 5 minutes per side or until done. Cool and chop chicken.
- Divide lettuce and remaining ingredients among 6 bowls. Top with bacon, chicken, and Avocado-Lemon Dressing recipe.
Side Dish Ingredients
- 1 avocado, diced
- ⅓ cup extra virgin olive oil
- 2 Tbsp fresh lemon juice
- ½ tsp salt
- ½ tsp pepper
- 2 cloves garlic, minced
- ⅓ cup water
Side Dish Instructions
- Process all ingredients in a food processor until smooth.
