Garlicky Swiss Chard and Basil PastaWine Recommendation

Ingredients
- 2 (1-lb) pork tenderloins, cut into 1-inch pieces (or use boneless, skinless chicken breasts)
- ½ cup whole wheat panko breadcrumbs
- 1 Tbsp Italian seasoning
- 1 Tbsp lemon zest
- 2 Tbsp lemon juice
- ¼ cup olive oil
- 1 cup low-sodium chicken broth
- ½ cup white wine (or use chicken broth)
- 2 Tbsp capers
- 3 Tbsp butter
Instructions
- Place pork between sheets of plastic wrap; pound to ¼-inch thickness using the heel of your hand or a meat mallet.
- Combine breadcrumbs, seasoning, and zest. Brush pork with lemon juice. Dredge in breadcrumb mixture.
- Cook pork, in batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until done. Remove from skillet; keep warm.
- Add broth, wine, capers, and butter to skillet. Cook just until butter is melted. Spoon sauce over pork.

- 12 oz whole-grain angel hair pasta
- 3 Tbsp chopped fresh basil
- 2 cloves garlic, minced
- 2 lb Swiss chard, trimmed and coarsely chopped
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- ½ cup low-sodium chicken broth
- 1 Tbsp lemon juice
Side Dish Instructions
- Cook pasta according to package directions; drain and stir in basil.
- Meanwhile, cook garlic and Swiss chard in hot oil in a large Dutch oven over medium heat 3 minutes or until wilted.
- Add salt, pepper, and broth. Cook 5 minutes or until chard is tender. Stir in lemon juice before serving.
