Ingredients

  • 2 (1-lb) pork tenderloins, cut into 1-inch pieces (or use boneless, skinless chicken breasts)
  • ½ cup whole wheat panko breadcrumbs
  • 1 Tbsp Italian seasoning
  • 1 Tbsp lemon zest
  • 2 Tbsp lemon juice
  • ¼ cup olive oil
  • 1 cup low-sodium chicken broth
  • ½ cup white wine (or use chicken broth)
  • 2 Tbsp capers
  • 3 Tbsp butter

Instructions

  1. Place pork between sheets of plastic wrap; pound to ¼-inch thickness using the heel of your hand or a meat mallet.
  2. Combine breadcrumbs, seasoning, and zest. Brush pork with lemon juice. Dredge in breadcrumb mixture.
  3. Cook pork, in batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until done. Remove from skillet; keep warm.
  4. Add broth, wine, capers, and butter to skillet. Cook just until butter is melted. Spoon sauce over pork.

  • 12 oz whole-grain angel hair pasta
  • 3 Tbsp chopped fresh basil
  • 2 cloves garlic, minced
  • 2 lb Swiss chard, trimmed and coarsely chopped
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup low-sodium chicken broth
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Cook pasta according to package directions; drain and stir in basil.
  2. Meanwhile, cook garlic and Swiss chard in hot oil in a large Dutch oven over medium heat 3 minutes or until wilted.
  3. Add salt, pepper, and broth. Cook 5 minutes or until chard is tender. Stir in lemon juice before serving.
