Ingredients

  • ¼ cup shredded Mexican-blend cheese
  • 1 taco-size flour tortilla
  • ¼ cup tortilla chips (about 6 chips)
  • 1 (2-oz) container guacamole
  • ½ Granny Smith apple, cored and sliced
  • ½ cup chopped strawberries

Instructions

  1. Sprinkle cheese on one half of tortilla; fold in half, and coat with cooking spray. Cook tortilla in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until golden brown and cheese is melted. Cut into wedges.
  2. Divide quesadilla wedges, chips, guacamole, apples, and strawberries among lunchbox compartments.
