Ingredients

  • 6 boneless pork loin chops
  • ¼ cup grainy Dijon mustard
  • 2 Tbsp raw honey
  • 2 Tbsp balsamic vinegar
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 3 Tbsp olive oil

Instructions

  1. Cut pork chops in half lengthwise. Combine mustard, honey, and vinegar; divide into two portions. Brush one portion on one side of pork chops. Sprinkle pork with ¼ tsp each salt and pepper.
  2. Cook pork, mustard sides down, in hot oil in a large skillet over medium-high heat 2 minutes.
  3. Turn pork; brush with remaining mustard mixture, and sprinkle with ¼ tsp each salt and pepper. Cook 2 to 3 minutes or until done.

Side Dish Ingredients

  • 4 organic tomatoes, cut into wedges
  • 1 (10-oz) pkg baby arugula
  • 1 (8-oz) pkg small fresh mozzarella cheese balls (ciliegine)
  • ¼ cup fresh basil leaves
  • 2 cloves garlic, minced
  • 2 Tbsp balsamic vinegar
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Combine tomatoes, arugula, cheese, and basil in a bowl.
  2. Whisk together garlic, vinegar, and oil. Pour over salad, and toss.
