Honey Mustard Pork Cutlets

Ingredients
- 6 boneless pork loin chops
- ¼ cup grainy Dijon mustard
- 2 Tbsp raw honey
- 2 Tbsp balsamic vinegar
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 3 Tbsp olive oil
Instructions
- Cut pork chops in half lengthwise. Combine mustard, honey, and vinegar; divide into two portions. Brush one portion on one side of pork chops. Sprinkle pork with ¼ tsp each salt and pepper.
- Cook pork, mustard sides down, in hot oil in a large skillet over medium-high heat 2 minutes.
- Turn pork; brush with remaining mustard mixture, and sprinkle with ¼ tsp each salt and pepper. Cook 2 to 3 minutes or until done.
Side Dish Ingredients
- 4 organic tomatoes, cut into wedges
- 1 (10-oz) pkg baby arugula
- 1 (8-oz) pkg small fresh mozzarella cheese balls (ciliegine)
- ¼ cup fresh basil leaves
- 2 cloves garlic, minced
- 2 Tbsp balsamic vinegar
- 3 Tbsp olive oil
Side Dish Instructions
- Combine tomatoes, arugula, cheese, and basil in a bowl.
- Whisk together garlic, vinegar, and oil. Pour over salad, and toss.
