One-Pot Mexican Chicken Pasta

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 onion, sliced
  • 2 Tbsp olive oil
  • 3 Tbsp Southwest seasoning
  • 12 oz whole wheat ziti pasta
  • 1¾ cups low-sodium chicken broth
  • 1½ cups water
  • 2 organic tomatoes, chopped
  • 2 organic green bell peppers, chopped
  • 2 cups BPA-free black beans, drained and rinsed
  • 1 cup frozen whole kernel corn
  • 1 cup shredded Mexican-blend cheese
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook chicken and onion in hot oil in a large Dutch oven over medium-high heat until chicken is done. Stir in seasoning.
  2. Stir in pasta, broth, and water; bring to a boil, reduce heat, and simmer, covered, 6 minutes, stirring occasionally. Stir in tomatoes, peppers, beans, and corn; cook, stirring occasionally, 5 minutes or until pasta is tender.
  3. Sprinkle with cheese and cilantro; let stand 1 minute or until cheese is melted.
