Blackberry-Amaretto Bellini
Ingredients
- 1 (6-oz) pkg blackberries
- ⅓ cup sugar
- ½ cup water
- 1 (750-ml) bottle Prosecco
- 2 Tbsp amaretto
- Garnish: blackberries
Instructions
- Place blackberries in a saucepan; muddle. Add sugar and water, stirring to combine.
- Bring blackberry mixture to a boil, reduce heat, and simmer 5 minutes. Remove from heat, and cool 15 minutes. Strain mixture, discarding solids. Cover remaining syrup (makes about ¾ cup), and chill up to 2 weeks.
- Add 2 Tbsp blackberry syrup to each of 6 champagne flutes; top each with Prosecco and 1 tsp of amaretto. Garnish, if desired. Makes 6 servings.
