Mustard Pork Tenderloin

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup water
  • ½ cup coarse-ground mustard

Instructions

  1. Rub pork with oil; sprinkle with salt and pepper.
  2. Cook pork in a large nonstick skillet over medium-high heat 2 minutes per side or until lightly browned.
  3. Place pork and water in a lightly greased 5- to 7-quart slow cooker; brush pork with mustard.
  4. Cover and cook on LOW 6 to 7 hours or until done. Cut into slices.

  • 2 (5-oz) pkg basil and herb-flavored pearled couscous
  • 2 (12-oz) pkg frozen French-cut green beans
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions.
  2. Cook green beans according to package directions; sprinkle with salt and pepper.
