Shrimp, Sausage, and Potato Dinner
Ingredients
- ¾ lb small red potatoes, halved
- 2 Tbsp olive oil, divided
- 1½ tsp Creole seasoning, divided
- ½ lb unpeeled large raw shrimp
- ½ (13-oz) pkg smoked sausage link, cut into ½-inch pieces
- 1 cup frozen yellow corn kernels
- ½ (12-oz) bottle cocktail sauce
Instructions
- Preheat oven to 425°F. Toss together potatoes, 1 Tbsp oil, and 1 tsp seasoning on a lightly greased rimmed baking sheet. Bake 20 minutes.
- Meanwhile, toss together shrimp, sausage, corn, 1 Tbsp oil, and ½ tsp seasoning on a second lightly greased rimmed baking sheet. Add to oven with potatoes, and bake 15 minutes or until potatoes are tender and shrimp are pink.
- Serve with cocktail sauce.
