Cider Glazed Pork Medallions

Mashed Sweet Potatoes and Steamed Peas

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed
  • 2 Tbsp butter
  • ¼ cup chicken broth
  • ¼ cup apple cider vinegar
  • 3 Tbsp packed brown sugar
  • 1 Tbsp Dijon mustard

Instructions

  1. Cut pork into 2-inch-thick slices. Pound pork to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season pork lightly with salt and pepper, if desired.
  2. Melt butter in a large nonstick skillet over medium-high heat; add pork and cook 2 to 3 minutes per side or until browned. Remove from skillet, and keep warm.
  3. Add broth, vinegar, sugar, and mustard to skillet; bring to a boil, reduce heat, and simmer 4 minutes or until sauce is slightly thickened. Return all pork to skillet, and cook 1 minute. Spoon glaze over pork.

Side Dish Ingredients

  • ¾ lb sweet potatoes, peeled and cubed
  • 2 Tbsp butter
  • ¼ tsp ground cinnamon
  • ½ (12-oz) pkg frozen green peas

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a saucepan over medium-high heat; reduce heat, and simmer 10 to 15 minutes until tender.
  2. Drain potatoes and return to pot; mash to desired consistency with butter and cinnamon. Season with salt and pepper, if desired.
  3. Steam peas according to package directions.
