Barbecue-Ranch Chicken Salad

Ingredients

  • 4 slices bacon, chopped
  • ¾ lb boneless, skinless chicken breasts
  • 1 romaine lettuce heart, chopped
  • 1 cup frozen yellow corn kernels, thawed
  • ¾ cup shredded Cheddar cheese
  • 3 Tbsp Ranch dressing
  • 3 Tbsp barbecue sauce
  • 1 cup seasoned croutons

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 1 Tbsp drippings in skillet.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Cook chicken in hot drippings in skillet over medium heat 5 to 6 minutes per side or until done. Let stand 5 minutes; cut into bite-sized pieces.
  3. Meanwhile, toss bacon, lettuce, corn, and cheese in a large bowl; add Ranch dressing and barbecue sauce. Toss.
  4. Divide salad among 2 plates; top with chicken and croutons.
