Barbecue-Ranch Chicken Salad

Ingredients
- 4 slices bacon, chopped
- ¾ lb boneless, skinless chicken breasts
- 1 romaine lettuce heart, chopped
- 1 cup frozen yellow corn kernels, thawed
- ¾ cup shredded Cheddar cheese
- 3 Tbsp Ranch dressing
- 3 Tbsp barbecue sauce
- 1 cup seasoned croutons
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain, reserving 1 Tbsp drippings in skillet.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Cook chicken in hot drippings in skillet over medium heat 5 to 6 minutes per side or until done. Let stand 5 minutes; cut into bite-sized pieces.
- Meanwhile, toss bacon, lettuce, corn, and cheese in a large bowl; add Ranch dressing and barbecue sauce. Toss.
- Divide salad among 2 plates; top with chicken and croutons.
