Broccoli-Quinoa Skillet

Ingredients

  • ⅔ cup chopped onion
  • 2 tsp olive oil
  • ½ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ⅓ cup quinoa
  • 1 cup low-sodium chicken broth
  • 1 (10-oz) pkg frozen chopped broccoli
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup 2% reduced-fat Greek yogurt
  • ½ cup shredded reduced-fat sharp Cheddar cheese

Instructions

  1. Preheat broiler. Sauté onion in hot oil in a large skillet or Dutch oven over medium-high heat 2 minutes. Add chicken; sauté 3 minutes.
  2. Add quinoa and broth; bring to a boil. Cover, reduce to medium heat, and cook 12 minutes.
  3. Stir in broccoli, salt, and pepper; cook 5 minutes or until broccoli is tender. Remove from heat. Stir in yogurt and ⅓ cup cheese. Sprinkle ⅓ cup cheese on top.
  4. Broil 2 to 3 minutes or until cheese is melted and bubbly.
