Broccoli-Quinoa Skillet
Ingredients
- ⅔ cup chopped onion
- 2 tsp olive oil
- ½ lb boneless, skinless chicken breasts, cut into bite-size pieces
- ⅓ cup quinoa
- 1 cup low-sodium chicken broth
- 1 (10-oz) pkg frozen chopped broccoli
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup 2% reduced-fat Greek yogurt
- ½ cup shredded reduced-fat sharp Cheddar cheese
Instructions
- Preheat broiler. Sauté onion in hot oil in a large skillet or Dutch oven over medium-high heat 2 minutes. Add chicken; sauté 3 minutes.
- Add quinoa and broth; bring to a boil. Cover, reduce to medium heat, and cook 12 minutes.
- Stir in broccoli, salt, and pepper; cook 5 minutes or until broccoli is tender. Remove from heat. Stir in yogurt and ⅓ cup cheese. Sprinkle ⅓ cup cheese on top.
- Broil 2 to 3 minutes or until cheese is melted and bubbly.
