Bacon Lattice Meat Loaf

Parmesan-Herb Roasted Potatoes and Broccoli

Ingredients

  • 2 lb ground beef
  • 1 large egg, lightly beaten
  • ¾ cup panko breadcrumbs
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 5 Tbsp ketchup, divided
  • 1 Tbsp honey
  • 6 slices bacon, cut in half

Instructions

  1. Preheat oven to 375°F. Stir together beef, egg, breadcrumbs, Worcestershire, mustard, and 3 Tbsp ketchup. Press mixture into a 9- x 5-inch loaf pan.
  2. Stir together 2 Tbsp ketchup and honey; spread over loaf. Arrange bacon in a lattice design over loaf.
  3. Bake 1 hour or until no longer pink in center.

Side Dish Ingredients

  • 2 lb small red potatoes, quartered
  • ¼ cup olive oil
  • ⅓ cup grated Parmesan cheese
  • 1½ tsp Italian seasoning
  • 2 (12-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Preheat oven to 375°F. Toss potatoes with oil, cheese, and seasoning on a lightly greased rimmed baking sheet; spread in a single layer. Season with salt and pepper, if desired.
  2. Bake 30 to 35 minutes or until browned and tender.
  3. Steam broccoli according to package directions.
