Cheesy Sloppy Joes
Spinach-Walnut Salad
Ingredients
- 1½ lb ground beef
- ½ small onion, chopped
- ½ green bell pepper, chopped
- 1 cup canned fire-roasted diced tomatoes, drained
- ½ (8-oz) block cream cheese, softened
- 1 Tbsp chili powder
- 1 tsp ground cumin
- 1 tsp yellow mustard
- 1 tsp Worcestershire sauce
- 12 green leaf lettuce leaves
- 1 cup shredded Cheddar cheese
Instructions
- Cook beef, onion, and bell pepper in a large skillet over medium heat until beef is browned and crumbly.
- Stir in tomatoes, cream cheese, chili powder, cumin, mustard, and Worcestershire sauce; bring to a boil, reduce heat, and simmer 10 minutes.
- Spoon beef mixture into lettuce leaves; sprinkle with cheese.

- 1 (5-oz) pkg baby spinach
- 2 avocados, cubed
- ½ cup chopped walnuts
- 6 Tbsp olive oil vinaigrette
Side Dish Instructions
- Combine spinach, avocados, and nuts in a large bowl. Pour dressing over salad; toss.
